Jenny’s Hummus
One can of garbanzo beans, drained
1/4 cup fat free plain yogurt
1 avocado
1/4 cup scallions
1/2 tbsp fresh lemon juice
Salt and Pepper to taste
Blend all ingredients in food processor until smooth. Delicious with fresh vegetables and as a spread on vegetarian sandwiches.
I am in love with hummus and look forward to trying it with avocado. I would have never thought of putting the to together. Thanks for the idea.
