This recipe is a great way to use leftover brown rice!
1 medium onion
2 cups cooked brown rice
1 large clove garlic, sliced into thin rings
1/2 cup peas
1/4 cup skim milk
1/4 cup freshly grated parmesano reggiano cheese
1/4 cup diced dried cranberries
Sea Salt
1. In a skillet, sautee onion and garlic until browned, add rice, constantly stirring so as not to burn the rice
2. Add peas, cook for additional 3-5 minutes, stirring frequently
3. Add milk, stir until creamy, add cheese, turn off heat and mix
4. Add cranberries and salt to taste
