1 large Spanish onion, diced
1 large clove garlic, finely minced
2 large sweet potatoes, diced
1 large granny smith apple
4 chicken apple sausages, casings removed and ground in food processor
1 tbsp olive oil
3/4 cup gruyere cheese, grated
6 large portobellos for stuffing
*Preheat oven to 400 degrees
1. In large skillet, sautee onions and garlic in olive oil until browned, add potatoes, stir until potatoes are slightly cooked (about 15 minutes)
2. Add diced apples, cook for another five minutes before adding sausage and 1/2 cup of the cheese, remove from heat and mix thoroughly, making sure that the cheese is evenly distributed
3. Set portobellos in baking dish and stuff each with a small “mountain” of the mixture. Top with remaining 1/4 cup of cheese and bake for 10-15 minutes, until mushrooms are done.

Does it really matter what one puts with apple, sausage and gruyere? You could put that on a door knob and it would be fantastic. That was all to say nice recipe!
