
Pumpkin maple French toast topped with bananas, warm apple cranberry butter (thank you, Trader Joe’s!) and just a couple of dashes of organic powdered sugar! It was incredible. So seasonally appropriate.
Pumpkin Maple French Toast:
Two eggs
1/4 cup milk
¼ cup pumpkin
1 tsp cinnamon
½ tsp natural maple extract
Banana
Apple Cranberry butter or other “butter,” warmed to melted state (jam or marmalade melted will also work)
Powdered Sugar (optional- I just did it for the photo
)
4 slices Whole Wheat or whole grain bread
Whisk together first 5 ingredients until fully blended. Dip bread until thoroughly coated (be careful not to completely soak it as the bread will break). Put French toast in a heated skillet. Allow to crisp and flip.
Top with banana slices, drizzle with apple cranberry butter and sprinkle powdered sugar if desired.
